Ingredients
1 large clove organic garlic
1 medium onion
2 Tbsp fresh parsley
1 stalk of celery, quartered
1 carrot, quartered
500g potatoes, chopped in 1 inch pieces
500g pumpkin, chopped in one inch pieces
2 Tbsp vegetable stock concentrate (or 2 tsp of of chicken/ veggie stock powder)
30 (2 Tbsp) of olive oil or butter
50g water
fine sea salt & pepper to taste
Instructions
1. Add garlic, onion and parsley into Thermomix (or food processor) speed 7/ 5 seconds, chop until fine.
2. If using Thermomix add celery and carrot, chop speed 5 for 3 seconds.
3. Add potatoes, pumpkin, celery, carrot, vegetable stock concentrate, oil or butter, water and salt or pepper and cook slowly until vegetables are tender (15 minutes/ 100C/ reverse speed soft)
4. Serve as is, or puree and serve as side dish.
