Fried Rice in the Thermomix

This is a very easy, quick and healthy way to make a big batch of fried rice. It easily feeds our family of six, with leftovers. The rice, veggies and egg are actually steamed – no oil is needed. You can use basmati rice and it will cook in about 20 minutes, or with brown rice it will cook in 35 minutes. And you don’t have to stand there stirring! Thanks to my friend Nancy for teaching me this method years ago with bacon and veggies – there’s lots of possible variations, so be creative and make up your own versions too. You can use as much meat and veggies as will fit in the Varoma – I’ve just given some suggestions, not definite amounts.

[Update for TM5!!] If you own a TM5, just make sure you add an extra 100g water to the bowl when you make this, as the bowl is bigger and needs that bit more water for the rice to cook through properly.]

Ingredients

1 onion, halved, or spring onions, quartered

1 clove organic garlic

4 eggs

400g coconut milk

500g water (for basmati rice) or 700g water (for brown rice)* (see note for TM5)

400g of raw basmati or brown rice (or less if you want a smaller batch)

100g – 200g of cubed chicken, fish, bacon, or some shelled prawns

2 carrots, sliced or julienned

12 stalks celery, sliced

And some of the following

broccoli/cauliflower florets

kohlrabi, peeled and thinly sliced

cabbage, shredded

spinach/silverbeet/bok choy, sliced

frozen peas & corn

cashews/slivered almonds/sesame seeds

fine sea salt & pepper to taste

Instructions

  1. Place onion or spring onions and garlic into Thermomix bowl and chop 4 sec/sp 5. Remove to Varoma dish.
  2. Place eggs into bowl and mix 5 sec/sp 3. Line Varoma tray with a large piece of wet baking paper (so that paper overlaps sides of tray approx. 2 cm) and pour eggs into tray. Set aside.
  3. Rinse bowl. Weigh coconut milk and water into bowl and place lid on top.
  4. Place rice basket on top of lid, and weigh the rice into the basket. Rinse well under running water, then insert basket into bowl.
  5. Place Varoma into position, and start cooking – 20 mins (basmati) or 35 mins (brown)/Varoma temp/sp 4.
  6. While rice begins cooking, chop up meat and/or veggies, placing it into the Varoma as you go, harder veggies and meat on the bottom, softer veggies and nut/seeds on top. (The steam will not begin cooking what’s in the Varoma until about 10 mins into cooking time, so you have time to get it all in the dish before then. Replace Varoma lid after each addition.)
  7. Check after 20 mins to see if everything is cooked. (With brown rice, just add the veggies and eggs when there’s only 15 minutes left to go, so they don’t overcook.)
  8. Remove Varoma and place lid underneath.  Remove rice basket using spatula, and tip rice into Varoma bowl.  Add the meat and veggies. Slice the egg up in tray (see photo below) and tip into Varoma bowl with rice.  Season with some tamari sauce / soy sauce / sweet chilli sauce, mix together gently, and serve!

Notes

  • Poke a hole through the meat and veggies in the Varoma, so that the steam can get through easily.
  • Don’t pack the Varoma too tightly or the meat and veggies may not cook well.
  • * If you own a TM5, add another 100g water, or rice may not cook through properly due to larger bowl size.

    Lol! KD you may just need to slice them thinner, and broccoli florets have to be really small! Or you can just roughly chop everything in the Thermomix first (speed 4-5 for a few seconds), then steam them. That’s the quick way. 🙂

    I made this tonight with the kids helping me cut the vegies, get the rice ready etc. It was great, I used salmon steaks as the meat it was delicious, definate dish to do again and again in our house.

    Wow! I’m a one day new thermomix owner. First time varoma meal. Loved it! Used ham and shredded cooked roast chicken. Let mine rest for a few mins so my eggs cooked through then. The rice was so fluffy and tasty. All 3 x kids and hubby enjoyed. Will definately cook this meal again. Can’t wait to try your other recipes. Thanks!

    OMG, we made this tonight & it is sooo good. Better than takeaway & could not tell it wasn’t “fried” in a wok. Kids ate every bit & hubby scraped the Varoma bowl to get a third helping LOL. Definitely a “keeper” in our family. Thanks for sharing.

    One thing though is I only used 3 eggs but they went grey – still tasted good but the colour was all wrong. Any ideas why they went grey?

    Hi, my husband and I love this – he says it is the tastiest fried rice he has ever tasted! However I have a problem with getting the rice cooking- I Have to put it on another ten mins. I do have a tm21 though- maybe the cook times are different? Should the liquid be touching the rice?

    Yum! I make this all the time. Probably my most cooked Thermomix meal. Tonight I made sticky chicken clone and chopped tossed through rice at end with sticky sauce. Delicious!!

    HI Jo, awesome recipe, pity i totally stuffed it up!! The rice was lovely, but the chicken, vegetables and also the egg didnt really cook. The coconut milk/water was coming up through top and all over the place!! I think i did this wrong tell me what you think? – i placed baking paper on the bottom layer of the varoma as well, thinking that the juice of the meat shouldn’t go into the rice and covered the top trays side holes as well as didnt leave a hole though the veggies…. any other thing i did wrong??? would love some advice from people. thanks

    yummo. I halved the recipe (small family) and added 2 cardamon pod seeds to the rice or you could add to liquid. I used full coconut cream as that’s all I had – delicious. thanks!

    Hi Jo,
    I made this tonight and it was a disaster. I used organic basmati rice. I only used 330g as there are only 3 of us. After 20 minutes the rice was a solid ball, cooked on the outside but raw in the middle. I mixed it, added another 400g of water and put in on for another 15 minutes. It came out a stodgy disgusting mess. 🙁 I am currently frying it in the wok in an attempt to dry it out a bit, but think I am going to end up getting take away.
    I have had thermi for 2 years and use it all the time. Never had such a disaster before. Any ideas? Thanks Lou

    We can’t get enough of this ‘fried’ rice, it’s delish! My whole family loves it and it’s a great way to get veggies into the kids. I marinate the chicken for 5-10 mins before and add whatever veggies need using, I also add bacon. I followed the great advice to cook rice in garlic and stock water (I use TMX Veg Stock)as my hubby doesn’t like coconut rice and it has a great flavour base. At the end I add a dash of soy and sweet chilli…it’s eaten in no time! I love your blog and recipes, am relatively new to TMX and am in love, so thanks! 🙂

    Hello. I like the idea of this recipe, but it didn’t work for my husband and me as neither of us like coconut and the flavour was WAY to strong. Is there anything else I could use? Carnation milk? Or leave it out completely?

    Awesome – so quick and easy! Plenty left over for lunch or dinner the next day! 17 year old son loved the fact that not only was it delicious, but there was very little washing up!
