Chicken and Cashews with Coconut Satay Sauce and Coconut Rice - Quirky Cooking

Don’t you love recipes where everything is cooked all at once, in one pot?  Well, this is one of those all-in-one meals, except it’s made in the Thermomix, not a pot – which makes it even better because you can do three or four different things at once!  So while the sauce is cooking in the jug, the coconut rice is steaming in the basket above it, and the chicken and veges in the Varoma tray on top!  This is one of our favourite quick-and-easy meals… when I don’t feel like cooking, I can have this on the table in half an hour.  And everyone loves it.  (Adapted from the Chicken and Cashews recipe in the Thermomix Everyday Cookbook – but with my coconut satay sauce!)

The first 3 steps, marinating the chicken, can be done ahead of time for more flavour – but if you’re doing it at the last minute like I usually am, don’t worry, it still tastes good!

Ingredients
  1. 300g - 400g chicken breasts or thighs
  2. 1-2 cloves garlic
  3. 1-2 cms fresh ginger
  4. a couple of tablespoons of tamari or soy sauce
  5. a splash of sesame oil
  6. 450g coconut cream (1 tin)
  7. 750g water
  8. 400g basmati rice
  9. some thin wedges of onion
  10. 2 stalks of celery, leaves removed, thinly sliced
  11. 2 carrots, thinly sliced
  12. broccoli, small pieces
  13. green beans
  14. chinese cabbage, thinly sliced
  15. boy choy, thinly sliced
  16. red (and/or green) capsicum, thinly sliced
  17. snow peas
  18. shallots, sliced and sprinkled on top
  19. some sesame seeds
  20. a handful of cashews (roasted or raw)
  21. a dash of sesame oil
  22. a dash of tamari (or soy sauce)
  23. a couple of handfuls of raw cashews
  24. 1 inch of fresh red chilli (or more if you like it hotter)
  25. a good handful of fresh parsley or coriander
  26. 2 cloves of garlic
  27. 1 inch of fresh ginger
  28. a couple of tablespoons of tamari (or soy sauce)
  29. 1 teaspoon of Rapadura (optional)
  30. a tablespoon of chicken stock paste (or vege stock paste)
Instructions
  1. Cut chicken into smallish cubes (about 1.5cm square) or slices and place in a bowl.
  2. Chop garlic and ginger in Thermomix bowl for 5 seconds, speed 7. Scrape out with spatula and mix with chicken in bowl.
  3. Add to chicken, mix in tamari or soy sauce and seasame oil, cover, and set aside.
  4. Pour coconut cream and water into Thermomix bowl.
  5. Sit lid on top of jug, and rice basket on top of lid. Set scales and weigh rice into basket. Remove basket and lid, rinse rice under tap (in basket), place basket in jug, then replace lid and lock into place.
  6. Place Varoma tray on top of lid, tip chicken into it and spread out so there's holes open for the steam to come through. Start cooking at Varoma temperature, 20 minutes, speed 4.
  7. Meanwhile, chop up the veges and place them into the Varoma as it's heating up. I start chopping the harder veges first and put them in as I get them chopped, leaving the ones like snow peas, capsicum and shallots until the end. Make sure there's a hole in the middle for the steam to get through.
  8. Sprinkle sesame seeds, cashews, sesame oil and tamari over the top of the veges.
  9. When the time's up, remove the rice (placing in the Thermoserver to keep warm), and stir the chicken and veges, breaking the chicken apart and making sure there are holes unblocked for the steam to get through. Cook for another 5 or 10 minutes on Varoma temperature, speed 2, checking that the chicken is cooked through. You may need to add a little more water if there's not much left in the bowl. Once cooked, remove Varoma tray while you finish the sauce. (Tip: You can take the lid off the Thermoserver with the rice in it, and sit the Varoma tray on top so they both stay warm.)
  10. To the juices and coconut cream left in the bowl, add raw cashews, red chilli, parsley or coriander, garlic, fresh ginger, tamari, rapadura, chicken stock paste and blend on speed 9 for 1 minute.
  11. Serve immediately - rice, chicken and veges with cashews on top, and sauce drizzled over liberally!

    Hi Jo, made this dish last night, and it was great. I did (at one point) ponder if I could have done it more quickly as a stir fry – but then reminded myself you can’t exactly walk away and do something else (in my case shower after run before going to basketball!) for 20 minutes whilst doing a stir fry, the sauce was delicious and easy and much less washing up than doing things the conventional way. Thanks for not only a great recipe, but a superb example of how to utilise Thermi to its full potential! Will be sharing this recipe with everyone I know! Thank you!!!

    I do have one question though- where can I find Tamari Sauce? I looked in a supermarket and a green grocer but couldn’t find it. I may have had a boy look and simply not seen it- hehe.

    Once again…impressed! Newish to the thermie I often read your recipes at first with apprehension…BUT… They have never failed. Love your fried rice & raw chocolate too.     Thanks so much for this recipe. I used it as inspiration as I didn’t have all the ingredients, and I eat grain free (meaning no rice, no quinoa, etc). I put some finely sliced cabbage in the rice basket, my pork and veggies on top, as much as your spices as I had, and it was really nice! Dh thought so too 🙂

    I can’t believe how much food this makes! I made it to gift thinking I’d need some left over soup as an entree. I only used the 400g of chicken, was worried more than that might not cook properly.
    It fed 3 adults, 3 kids and I have left overs for another 2 – 3 adults too!!
    It was delicious too. 🙂

    I’m having the same problem – sauce is very hit and miss. I’ve made this four times, the sauce was edible once and still wasn’t as great as this list of raves would imply. Would love to know what I’m doing wrong!

    I’ve tried the recipe as written twice. Substituted cornflour for nuts once, reduced stock, substituted capsicum for chilli, extra ginger and garlic. Still no joy 🙁

      That’s very strange! I wouldn’t sub the nuts for cornflour as they give it a rich creamy flavour. How much creamy water is left in the bowl before you add the nuts and ginger and garlic etc? Maybe you are making less rice so there’s more liquid left in the bowl at the end? That would make a thinner, runnier sauce. Or maybe you’re not using enough coconut cream?

    To the ladies having problems with the sauce…….are you using a good quality coconut cream? I use Ayam brand (and 450g is almost two tins)…… Also really needs the cashews to make it creamy……. Substituting for corn flour would be very bland, as its then just watery coconut cream! Have made this several times exactly to the recipe (that’s how I roll!) and the sauce is always amazing!

    Hey Jo made this one for dinner tonight and it was a hit with the family ranging from 6 to 78, yummy sauce mine was a little green from herbs but I do love green. I might knock back the rice next time to 300g it cooked so much it came out the top, really inspiring blog looking forward to trying a few of the sweet stuff thank you;)

    Made this tonight for re first time. One word – yummo!! My bf’d daughter is intolerant to the protein in cows milk and soy so instead I used Worcestershire sauce and it turned out fine. I also didn’t have any stock so just left that put. Nom nom.

    I made this tonight, the first time I’ve cooked a total meal in the Thermomix. It took me closer to an hour – including finding the ingredients and looking for some fresh coriander with my head torch on in the garden! I liked everything except the rice spoiled it. It was too gluggy. Is 750mls of water correct? I noticed you have only 500ml for 400g rice in your fried rice recipe. Also there was a huge mess to wash up with all that greasy coconut cream stuck on nearly all the layers. I will make this again but maybe do the rice in the rice cooker. The sauce was really yummy. Thank you for getting me using my TM for more than custards, gravies and smoothies!!

    HI I am new to using the Varoma. I am never sure whether I should be using the “tray” or the “basket”
    in recipes. I assume here all the chicken and veg is put in the basket and not into the tray inside the basket??

    I’ve only made this once, but loved it. Next time I’d make less rice though.

    Shellwy – I cooked the chicken in the bowl (bottom part of the Varoma) and veggies in the try. I found I couldnt fit as many veggies in as I wanted, so next time, I plan on throwing chicken and veggies in the bowl, leaving the tray out and seeing how that works.

    I posted a comment on May 22nd and made this again last night with 500mls water and 350g rice. This time there was no major mess from the frothing coconut liquid. It turned out better but I missed the bigger quantity of yummy sauce. Next time I will try adding an extra cup of boiling water with the final sauce ingredients and see how that goes. I used the top tray for the vegetables. I found it held more than enough and the vegies tasted so good steamed like that.

    Awesome recipe – have made a few times now, I find that I only put the Veges in when the rice has finished and then cook another 5-10 min otherwise they got a bit squishy for our family, but it’s a brilliant recipe!     I am a newbie to Thermomix and made this recipe for the first time. I was not sure if I should place the chicken into the big Varoma recipient (the one that goes on top of the jug lid) or into the tray that goes before the Varoma lid? How about the vegetables, do they go into the same recipient with the chicken or into the tray? Thank you!

    Loved the flavours but made an enormous mess. I added the two cans of coconut cream and 750g water. Plus 400g basmati rice. The whole thing boiled over and rice came spilling out the top. Is this normal??

    Elisa James, I had the same problem. I added everything exactly as the recipe said but it boiled over and went everywhere. I ended up having to take the rice out and cook it in a saucepan on the stove. Any hints as to what may have gone wrong??

    I have been following your blog for a little while… love your ideas… made your wonderful chicken & cashews with barramundi… my dinner guests were blown away! The flavours were fabulous. So subtle.. I added some kaffir lime leaves to the coconut and water mix and shredded some over the fish…to die for 🙂

    Also made your lime and macadamia nut cake… my guests brought desert.. soooo I get to try it out tomorrow!!! Yaaaay 🙂

    Thanks for this absolutely divine recipe! DH and my two daughters LOVED it! (as did I). I had to use rump steak instead of chicken cause realised chicken has passed it’s used by date, but still delish!!

    Just a quick question regarding the sauce…..can I freeze it? There was quite a bit left over and it would be a shame to throw it out, I could reuse it on another dish….just not sure as I’ve never frozen coconut cream before. thanks again for the wonderful recipes on your site!

    I’m new to the world of thermys and this has been one of my first “all in one meals” – it was great, thanks!
    Just wondering if its ok to put the marinated chicken in the bottom part of the varoma as I thought that the raw chicken juices would fall onto the rice. I lined the varoma with a wet piece of baking paper and the chicken ended up tasting good but looked like it had boiled rather than steamed.
    Is the baking paper necessary or is it safe to let the chicken juices run onto the rice?

      Hi Danielle, no need for paper, the chicken juices do go into the rice and cook along with everything else, giving it the flavour you want! It’s fine 🙂

    Thank you so much for such a great recipe – and easy too! I would say my sauce was super salty which I think was to do with my veggie stock, next time I make stock I’m reducing the salt content. I might reduce the soy in the recipe as well. The other small issue was the rice bubbled out of the top of the lid. I’d say with cutting up, cooking and washing up it took me over an hour but so worth it!
