This delicious ‘tray bake’ recipe was a favourite at my Quirky Cooking Workshops in 2025, and I promised to get it up on the website once we moved on to other recipes in 2026. So here it is!
It’s an easy recipe to double or triple if you have dinner guests, and I love to serve it with a colourful roast veggie salad with crispy nuts and seeds. (You can find my favourite Roast Veggie Salad in my Simple, Healing Food cookbook.)
Using the Quirky Cooking Organic Moroccan Spice Blend makes this a quick-and-easy meal to prepare! I hope you love it. 🙂
Moroccan Lamb Chops with Pumpkin Wedges

Ingredients
Marinade:
- 1 1/2 to 2 Tbsp lemon juice
- 1 Tbsp Quirky Cooking Moroccan Spice Blend
- 1 Tbsp honey
- 2-3 Tbsp olive oil
- Fine sea salt
Lamb & Pumpkin
- 1.5kg lamb chops
- 800g pumpkin (approx), cut into 2cm wedges
- 1/2 a red onion, cut into thin wedges
- coarsely ground pepper (eg. Aussie Pepper, Kibble)
- fresh thyme leaves (for garnish)
Instructions
- Preheat oven to 200C.
- Marinade: Mix together lemon juice, Moroccan spice blend, honey, 1½ Tbsp of the olive oil and 1½ tsp salt in a large bowl/dish. Add the lamb chops and turn in marinade until well coated. Set aside at room temp while you prepare pumpkin.
- Cut pumpkin into wedges (about 2cm at widest edge) and remove seeds. Lay in large baking tray/s with red onion mixed through and drizzle with olive oil. Season with salt and pepper. Place into the oven and roast, uncovered, for 20 mins.
- Remove tray/s from the oven and arrange the lamb chops on top of the pumpkin. Tip over all of the marinade. Place back into the oven and cook, uncovered, for 15 mins.
- Remove from oven, turn lamb chops over, and sprinkle with thyme leaves (if desired). Place back into oven and cook for another 15 mins, or until lamb is cooked through and tender, with slightly crispy edges.
- Serve pumpkin and lamb chops with green beans and fermented veggies, or a roast veggies salad.
Notes
Storage: Keeps in fridge for 3-4 days. Not suitable for freezing.
