From his iconic, blue ice-cream van in Brunswick Heads, chef @walfoster of @naturalicecreamaustralia (NIA)creates unique, small-batch cultured ice creams that incorporate native Australian flavours like wattleseed, mountain pepper, tamarind, rosella, smoked paperbark, pandanus, finger lime and aniseed myrtle. 

In this episode, the Quirky Cooking team stops by to visit Wal while on an events trip and I chat to Wal about the story behind NIA. Wal shares his interest in probiotic and prebiotic foods and "food as medicine" and talks about how his focus has changed over the last few years from creating sugar-laden French classics and working long hours, to creating one-of-a-kind, gut-healthy ice creams (with indigenous ingredients that he often forages himself), while living a slower, healthier life that includes time to surf and spend time with friends. 

When you stop by NIA for a treat, expect it to also be a learning experience. Wal takes the time to share the fascinating stories behind each ice cream as he serves them, including the ingredients (which may include native fruits you've never heard of before!), where they're sourced, how the ice cream is made and why it's good for you. Wal's amazing creations always bring a lot of joy and delight to his customers, many who may have never really thought about the health of their microbiome before visiting his little blue van! 

Wal generously shared a recipe for honey-sweetened, cultured ice cream with mountain pepper and roasted apricots in my latest cookbook, Simple, Healing Food, so it was a fun idea to have a cookbook signing and ice cream party at Wal's van in Brunswick Heads. Here’s some tips for starting your day well: 💚

1. Go to bed early so you get enough sleep

2. Be up early: set an alarm & jump out of bed!

3. Sit in the sunshine & drink water

4. Have some quiet time on your own before everyone else is up 

5. Do a “brain dump” - jot down whatever is on your mind, then make a to-do list just for today

6. Plan your day - check your calendar & plan your meals

7. Journaling (if you have time) for creativity & sorting out your thoughts 

8. Movement - stretching, exercises, a walk, or even just 5 mins of chi squats

9. Eat a nourishing breakfast

10. Declutter your space (even 5-10 mins helps!)

Here’s one of the quick & easy, prepare-ahead br Here’s one of the quick & easy, prepare-ahead breakfasts I mention in my latest podcast, “Preparing Ahead for Breakfasts ‘On-the-Go’!” 

Have some baked “Herbed Meatballs” in the fridge ready to go for breakfast, snacks or lunchboxes (recipe in Simple, Healing Food - but basically it’s just mince, herbs, garlic (opt), salt & pepper - bake on oven tray for 15 mins at 200C). Warm a few meatballs in a pan with ghee or olive oil, add whisked eggs and scramble! I also like to add some chopped chives or fresh herbs sometimes. Serve with sauerkraut and micro greens or salad for a nutrient-dense breakfast! (Or lunch!)

That is my aim with Quirky Cooking and I know it's also the aim of my bestie, Helen, in her business. Weekend treats ❤️ It’s been a while since I Weekend treats ❤️ It’s been a while since I made the Nutty Chocolate from Life-Changing Food! Today was the live “Snacks” class for our online gut health program (The Gut Health Formula) and we talked about natural sweeteners, healthy snack ideas, reducing the food stress, and lots of different ways to make CHOCOLATE!! And we made this recipe. So good, if I may say so myself 😁

What’s your favourite additions to homemade chocolate? I added lots of roasted almonds, macadamias and cashews to this one. And I may have eaten too many pieces while cutting it up… 🙈😂
