Butterfly Blue Pea Flowers have recently gained popularity due to the many reported health benefits (see below) and the beautiful, vibrant blue colour they produce. Use as a garnish for desserts and salads, mill the flowers to a powder and add to smoothies or cheesecakes, use to colour rice (as in the Malaysian dish Nasi Kerabu), or make into ‘blue tea’!

These beautiful, butterfly pea flowers are grown under the raspberries on my friends Gabi and Michael’s farm in Yungaburra, FNQ. Gabi and Michael love working with nature to sustainably grow raspberries and flowers, which they then preserve by freeze-drying.
Freeze-drying retains the nutrition, fibre and vibrant colour in the flowers. The flowers can then be stored for long periods of time, used to garnish desserts and decorate food, ground into a vibrant powder, or made into a beautiful blue tea! The possibilities are endless. Get creative and tag us in your photos so we can share your culinary creations to inspire others!

Health Benefits of Butterfly Pea Flowers:
Butterfly blue pea flowers are reported to have immune-boosting properties and assist in weight loss. As published in the Journal of Ethnopharmacology, they have “been used for centuries as a memory enhancer, nootropic, antistress, anxiolytic, antidepressant, anticonvulsant, tranquilizing and sedative agent.” Pregnant and lactating women are advised to consult their doctor before use.
Blue tea is a caffeine-free, herbal tisane made by infusing the flowers in hot water to create a brightly-coloured, floral-smelling tea that has the mesmerising ability to change colour with a change in PH!
🦋 Place 1 rounded teaspoon of the freeze-dried flowers into a tea strainer and set in a teapot or large cup.
🦋 Pour over 1 cup of hot water, cover and steep for 10-15 minutes.
🦋 You can drink as is, or add flavourings such as cinnamon, ginger, lemongrass or honey.
🦋 To see the colour change to a vivid purple-pink, add a good squeeze of lemon juice.
🦋 To serve as iced tea, sweeten to taste, chill and pour over crushed ice. Serve with lemon wedges.
