{Salted Caramel Pecan Pie} I thought this was worth a reshare, seeing I make it for Christmas every year! ✨🎄

This is my take on a dessert our family always enjoys at Christmas time - pecan pie! Traditionally it’s full of refined sugars and so sweet you can barely eat half a slice, so I “healthified” it a few years ago and it’s become a huge favourite in the Quirky Cooking community! You can find the recipe in my Life-Changing Food cookbook. 🤗🎄✨

Ingredients: blanched almond meal, eggs, butter or coconut oil, salt, honey, dates and pecans.

Lemon Butter Tarts with Almond Meal Pastry 🍋🧁

I made these for a Christmas high tea party yesterday and they’re so delish I think I could eat the whole plateful! 😅 (I made a few with fresh raspberries for garnish instead of cream, for those who couldn’t have cream.)

These yummy tarts can be made now and frozen until Christmas (without the cream)! Here’s how to make them:

(Makes about 40)

Almond Meal Pastry

450g blanched almond meal
3 large eggs
90g butter or 45g coconut oil
1/8th tsp salt if butter is unsalted (or using coconut oil)

Mix all pastry ingredients in Thermomix at speed 6 or in food processor until well combined. I use cold almond meal from the freezer so I don’t have to chill the dough, but if yours is from the pantry you may need to chill it until firm.

Make small balls of dough, press flat, then press into mini muffin tins (can line with paper muffin cups).

Bake in 180C oven for about 10-15 mins or until lightly browned. Set aside to cool.

Lemon Butter Filling

Juice of 2 lemons
160g butter or coconut oil
4 large eggs
120g honey
1/8th tsp salt if using unsalted butter or coconut oil

Place all filling ingredients in Thermomix, insert butterfly whisk and cook 12 mins/80C/speed 3.

(If no Thermomix: Whisk eggs and honey in a saucepan until smooth, then place pan over a low heat. Add the butter or coconut oil, lemon juice and salt and whisk continuously until thickened.)

To assemble: Spoon filling into tart shells and place into freezer to set. (Keep trays level!)

Top with whipped cream and garnish with freeze-dried butterfly pea flowers or a sprinkle of freeze-dried raspberry powder, or a fresh raspberry.

(You can find the butterfly pea flowers and raspberry powder in my store, although at this time of year the flowers are low in stock as they are just beginning to be harvested so we don’t have many yet.)

Storage: Keep for up to 1 week in the fridge, or freeze for 1 month in an airtight container.

A bit of summery fun… Mango, Lime & Vanilla Bean Ice Cream (with freeze-dried mango crumble)! 😍💛

Our Far North Queensland summer weather has coincided with an influx of visitors, so when a box of mangoes turned up on my doorstep the other day I thought it was time to get the ice cream maker out and make some ice cream for everyone. I’m so glad I did! 🤤

If you’re like me and your ice cream maker has been sitting in the laundry or the back of a cupboard, neglected and lonely, take this as your sign 🛑 to get it out a dust it off... it’s ice cream season! If you don’t have an ice cream maker, don’t worry - there’s a non-ice-cream-maker method for you in the recipe too. 😊

Well it’s been a very delicious and fun few days here, with a family Thanksgiving dinner, a Christmas street festival in our little town, a cooking class for our gut health program, a big dinner with family and friends afterwards, our dear friends visiting from the UK so lots of good food and good chats around the table, and the Monday cooking class today! I can’t wait to share some new recipes with you over the next few weeks 🤗

Have you tried 'mushroom pizzas'? So yum!! (If you like mushrooms!) They're really quick to make, just upside down portobello mushrooms for the base, pull out the stalk and add whatever pizza toppings you like (tomato paste, herbs, olives, bacon, cheese, spinach, etc) and bake until browned.

Easy peasy!! 😃

If you can’t have dairy, try grated zucchini on top with whisked egg drizzled over, or a dairy free white/cheese sauce, instead of the cheese.
