Spreadable butter ✨ (With no nasties and no vegetable or seed oils!) 🧈

With all the rain here in Far North Queensland the ants are driving us crazy, and we can’t leave butter out or this is what happens… 🐜 🐜 🐜 So I’ve gone back to an old recipe my mum taught me years ago for spreadable butter, which can be used straight from the fridge. Here’s how to make it:

Blend about 500g softened butter with 150-200ml water and 150-200ml extra virgin olive oil, until light and creamy. (The amounts don’t have to be exact.) Place into your butter dish and store it in the fridge.

Works well for spreading on toast or sandwiches. I still prefer pure butter on my veggies or steak though 😁

“A group of us on the Sunshine Coast chatted at Jo’s recent cooking classes & decided that it would be nice to create a local group of like minded friends because so many of us doing Gaps etc find it hard to socialise when people just don’t understand why you can’t meet them for a meal out etc.

So we are doing our own Quirky style catch ups & today a group of us went to the @buchifermentary (recently featured in Jo’s stories). We had a lovely time & plan to keep creating opportunities to connect socially!

Highly recommend doing this sort of thing in your neighbourhood - it’s nice to have friends who “get” it xx

Mmmm Fish Tacos - this is one of my favourite recipes from Simple, Healing Food - have you tried it? It’s a grain-free (and GAPS) version using wraps made from spinach, eggs and coconut flour, with marinated fish, crispy-tangy red onion & cabbage slaw, homemade mayo (or sour cream), with avocado, jalapenos & fresh coriander to garnish. Happy weekend! ✨ I highly recommend making my Celebration Chocolate Cake with chocolate buttercream (from Simple, Healing Food), topped with freeze-dried berries and butterfly-pea flowers (from my shop), fresh raspberries, and strawberry fruity dream. Yummmm!! 😁❤️😍 (Fruity dream is a classic Thermomix recipe, you can find naturally-sweetened versions on my blog.)

Meals with a view! I’m enjoying staying with my son, Isaac @wavelengthtech, in Brisbane for the week while doing some cooking workshops in SEQ - how gorgeous is this weather!! You’d never know there was a cyclone last week 🌀 it’s golden! I’ve been sharing my meals while away on my stories, here’s a few (plus a couple of the view from Isaac’s balcony 🤩)…

1. Friday night dinner: Pork burnt ends with roast potatoes, veggies & @buchikombuchaustralia - mmmmm

2. Lunchtime treat: fresh sourdough with French butter & chicken liver pate (I found the best deli nearby with all the good stuff!!)

3. A light breakfast: kefir cream, paleo granola, wild blueberries & banana

4. A GAPS breakfast: leftover beef pot roast slow-cooked in stock with veggies

… and a moonrise over the city, and breakfast in the sunshine with the kookaburras ❤️

Off to my Yandina workshop today, have a great day all! 🎉🎉

Nervous system reset 🌿🌞

This morning I woke up super early with racing thoughts, so I got up and went for a walk. I’m so glad I did. 💚 Have you ever thought about all the “health hacks” that are covered when you go for a morning walk in nature? Natural movement, exercise, strength, stretching, breath work, relaxation, prayer/meditation, morning sunlight exposure, time outdoors in nature (natural dopamine), grounding (walk barefoot on grass or wear grounding sandals)… Do a 20-30 min morning walk and check a bunch of health goals off your list.👌🏻 Plus drink water before and after (hydration) and have a protein-rich breakfast, and you’ll be set up for the day!! 🌞🌿

(So thankful to live in country FNQ where “walking around the block” looks like this!! 😍)

Anyone else feel like this about Russian Custard (and Russian Custard Ice Cream)? 😄😄😍🥰 (Watch to the end!)

A silky, decadent, gut-healing custard (or frozen custard ice cream) made from egg yolks, honey, vanilla, butter (or ghee) and salt. I make it in the Thermomix but you can make it in a double boiler on the stovetop too.

PS I use the egg whites to make Cheesy Pizza Bases 🧀🍕 (also in cookbook) or use 60g egg whites in the place of one whole egg in baking. 🍰

🌀Preparing Your Kitchen for a Cyclone!🌀 Here in FNQ we’re used to coping with cyclones (& power outages & flooding) at this time of year—but for those of you down south waiting for cyclone Alfred to arrive it might be a new experience! Thinking of you all this week 🙏

Here’s some ideas for things to have on hand in times like these:

Fridge:
- veggies that keep well: cauliflower, broccoli, carrots, beetroot, leeks, cabbage, zucchini, tomatoes, etc
- silverbeet/kale/herbs (or can store in vase of water)
- eggs
- milk/cream/yoghurt (+ some in freezer)
- hard cheeses (last longest)
- butter
- ice bottles if power goes out (fill milk bottles with water & freeze)

Fermented veg (when shop shelves are bare, fermenting really pays off!)
- fermented carrots, salsa, sauerkraut, pickles

Freezer (keep it full, open as little as possible, add more ice as needed)
- meat/chicken/fish
- small bottles of milk
- stock
- homemade baking
- berries
- fill spaces with ice/frozen bottles of water so stays cold if power off

Pantry:
- potatoes/sweet potatoes
- pumpkin (couple of small ones so can use as needed)
- onions, garlic
- avocados
- ginger (for cooking and tea)
- fruit that lasts well (apples, citrus, bananas)
- Beef jerky, meat sticks
- granola, nuts/seeds, muesli bars/nut bars, homemade bikkies
- Dried veggies (grated carrot, zucchini, sliced celery, mushrooms, tomatoes)
- Tins/bottles of tomatoes/passata, wild-caught salmon, tuna in spring water
- lentils/beans etc (dry or tinned)
- tinned coconut cream
- chia seeds (can make chia puddings with coconut cream for snacks)
- tea, coffee, herbal tea
- honey
- ghee / olive oil

Don’t forget:
- camping gas cooker/s or gas bbq (outdoors) or gas oven/stove (& gas bottles)
- water filter and water casks/bottles (plus fill sinks/bathtub so you have water to wash dishes etc)
- candles, matches/lighters, lanterns, torches & batteries
- battery-operated radio
- charged-up power banks for phone or solar charger (+ charge up your laptops)
