Here’s one of the quick & easy, prepare-ahead breakfasts I mention in my latest podcast, “Preparing Ahead for Breakfasts ‘On-the-Go’!”

Have some baked “Herbed Meatballs” in the fridge ready to go for breakfast, snacks or lunchboxes (recipe in Simple, Healing Food - but basically it’s just mince, herbs, garlic (opt), salt & pepper - bake on oven tray for 15 mins at 200C). Warm a few meatballs in a pan with ghee or olive oil, add whisked eggs and scramble! I also like to add some chopped chives or fresh herbs sometimes. Serve with sauerkraut and micro greens or salad for a nutrient-dense breakfast! (Or lunch!)

Toast and cereal may be easy options, but they often cause bloating or blood sugar crashes later on. A "quick carbs" breakfast also means you’ll generally be hungry again in a couple of hours, whereas a nutrient-dense breakfast will set you up for hours and will reduce the desire for snacking later on!

Today was the live “Snacks” class for our online gut health program (The Gut Health Formula) and we talked about natural sweeteners, healthy snack ideas, reducing the food stress, and lots of different ways to make CHOCOLATE!! And we made this recipe. So good, if I may say so myself 😁

What’s your favourite additions to homemade chocolate? I added lots of roasted almonds, macadamias and cashews to this one. And I may have eaten too many pieces while cutting it up… 🙈😂

Monday cook-up… chicken stock, roasted chicken drumsticks (after making stock), ghee, hearty beef stew (using some of the stock), blueberry cobbler and blueberry cupcakes (with fresh blueberries given to me from a local farm and my vanilla cupcake batter), sticky date puddings (haven’t made the sauce yet), breakfast casserole, and grain-free wrap dough! Not a bad effort, thanks to my lovely sister’s help 🤗 Most of these recipes are from my Simple, Healing Food cookbook, except the grain-free dough which is in Life-Changing Food, the blueberry cobbler which is similar to the upside-down cake in my reels, and the sticky date puddings which will be up on the blog soon! 😍
