Need some inspiration for breakfasts that aren’t toast or cereal, and will help you reach your protein goals? Here’s some of my recent breakfasts!

1. Leftover BBQ brisket, fried egg & sprouts

2. Leftover taco mince (made with my Tex-Mex spice blend) scrambled with eggs, with fermented salsa and kefir cream. (Recipes on my blog & in my Simple, Healing Food cookbook.)

3. Chicken soup (just chicken, stock & and few veg) with butter. (Stock recipe in Simple, Healing Food.)

4. Smoky bacon burgers & veggies with butter (leftover from dinner).

5. Eggs fried in ghee with buffalo mozzarella & sauerkraut.

6. Cheesy pizza (made from eggs, cheese & almond meal - recipe in Simple, Healing Food) topped with ham, veg, olives, herbs. (I bake & freeze them for breakfast & lunches.)

7. Steak with butter, avocado & sauerkraut.

8. Leftover roast beef with fried egg & sauerkraut.

9. Leftover roast beef with pumpkin mash (made from leftover roast pumpkin) & sauerkraut.

10. Apple cinnamon nut porridge (no oats - recipe in Life-Changing Food) with yoghurt, maple syrup & bacon.

Ditch the boring breakfasts and start your morning well!! 💥👊🏻

{Baked Cheese Platter} Say cheeeeeese!! 😍🤩 We had fun today making a baked cheese platter during our first Christmas cooking class, and my great nephews had fun helping eat it 😁 We also made some delicious gingerbread biscuits and shortbread, and Christmas fudge which I just remembered is in the freezer, gotta go, byeeee 🏃🏻‍♀️🏃🏻‍♀️🏃🏻‍♀️ *runs to freezer*

It’s pumpkin pie time!! 🎉🎉 If you’ve never tried making this deliciously creamy & spicy dessert, this is your sign to try it!

My gut-healthy version of this recipe is very simple:
- mix together the 4 ingredient pastry: almond meal, butter, salt, egg (there’s allergy alternatives if needed)
- press into dish (make pretty edges if you like) then prebake 15 mins
- blitz some raw pumpkin in Thermomix or food processor (or grate by hand) and cook with cream (dairy or coconut), honey, gelatine, ghee (or coconut oil), salt and spices. (If you have my *Pumpkin Pie Spice Blend use that, or the spices listed in the recipe.)
- whisk in egg yolks, pour into pastry shell and set in the fridge or freezer til firm 😍

I love it served with kefir cream, but whipped cream or vanilla ice cream are delish too! 😁

My fridge after today’s cooking class… 😂😍🤣

(Don’t worry, India and I went for a drive and dropped off trifles to neighbours, family and friends this afternoon so there’s only one here for us - way too dangerous otherwise!! 🤣🤣)

Also in my fridge: Pork meatball soup with sour cream & dill (recipe coming to the blog this week!); @vannellacheese buffalo mozzarella (latest addiction 😅); prawn, ricotta and lemon tarts with almond meal pastry (recipe developed for local Christmas festival demo, up on the blog this week!); smoky beef & bacon burgers with veggies (last night’s dinner); a big jar of fermented salsa (from the fermenting class last month); kefir (both milk & water); sauerkraut & fermented veg; Greek yoghurt; lots of cheese and butter and eggs… (plus meat and veggies) 😁

Woooo what a class!! We had a lot of fun today making trifles in our “Cooking by the Seat of Your Pants” class 😄… I made my Chocolate cherry trifle and Joye made her Apple crumble trifle, then I used up the leftover bits of cakes, custard, cream and fruit to make a little raspberry chocolate trifle and a mango trifle (plus another little chocolate-cherry trifle), and our neighbours, family and friends were all happy to help eat them so nothing was wasted!! 😄😄 (There’s half a chocolate cherry trifle left if anyone wants to pop by… 😁)

Fridge clean out day - how about making a veggie c

Fridge clean out day - how about making a veggie casserole to serve as a side dish or on its own? Can be prepped today and baked another day!

- 1 small onion, chopped
- 1 clove garlic, finely chopped (opt)
- 2 Tbsp ghee or butter
- 250g mushrooms, sliced (optional)
- 400g broccoli, broccolini, asparagus or zucchini (or a combination), cut into bite-sized pieces
- 600-800g carrots, potatoes, sweet potato or pumpkin (or a combination), sliced
- Salt & pepper
- fresh dill or parsley
- 2-3 boiled eggs, chopped
- 1 1/2 cups grated cheddar or tasty cheese
- 3/4 cup milk or pure cream (or DF milk)
- Paprika

Method:

Preheat oven to 180C (if baking straight away).

Sauté onion and garlic in ghee or butter over low heat until softened.

Add the rest of the veggies and 1 tsp salt (or so) and a sprinkle of pepper. Stir, cover with lid and allow to cook over low heat until barely tender (don’t overcook), about 10 mins. (If you feel like it’s going to stick to bottom of pan you can add a little splash of water, but if it’s low heat you shouldn’t need to.)

Add chopped dill or parsley, taste and add more salt and pepper if needed.

In a bowl, mix together eggs, cheese and milk or cream.

Grease a medium sized casserole dish with butter or ghee and place half the veggie mixture in the dish, top with half egg mixture. Repeat layers. Sprinkle with paprika. [This is when you would refrigerate the casserole if serving another day.]

Bake for about 30 mins or until browned on top. [If baking cold from the fridge it will take 40-45 mins.]

Gut health tip: If using potatoes or sweet potatoes, cook and assemble the casserole (or a couple of them) a day ahead and refrigerate, then pop into 180C oven and bake. Chilling cooked potatoes in the fridge for a day or two converts the starch to resistant starch, which is beneficial for your gut bacteria. It will also reduce the rise in blood sugar after your meal and improve insulin sensitivity. ❤️

BBQ Beef Brisket! A classic recipe with more versions than you could count, easy to make, delicious, and feeds a crowd!! This one has taken me a while to share… about a year and a half to be exact 😅 but better late than never. 😁 I had a message from someone asking if I’d ever gotten Joye’s brisket recipe up on the blog so I thought I’d better get onto it! (See, just keep hassling me about recipes you’re waiting for and I’ll eventually get them up for you 😄)

This is one we made for my birthday, because I get more excited about bbq brisket than cake these days 😂😂

So about the recipe… it’s a Joye recipe and if you have ever joined us for our Monday “Cooking by the seat of your pants” cooking classes, you’ll know Joye isn’t really a strict recipe person 😁 and measurements are generally optional! I’ve written it out in her own words, so good luck - when I have time I’ll make it again and measure more carefully for you! 😄 Enjoy!! (And thanks Joye 😘😘)

2 brown onions, very finely chopped
3 garlic cloves, very finely chopped
2 Tbsp Dijon mustard
1 Tbsp seeded mustard
2 slurps liquid smoke (opt - if you can get the natural one)
1/4 cup vinegar (prob could use whichever kind you like)
3/4 cup Rapadura (or Panela or coconut sugar)
2 tsp salt (I use Celtic sea salt)
1 tsp pepper (I use Aussie Pepper kibble)
1 tsp smoked paprika
1/2 tsp cayenne pepper
2-3kg beef brisket (grass fed & finished if you can)

I’m thinking we cooked it for about 6 hours at 140C in a covered roaster (basting now and then), then another 30 mins at 180C uncovered, and basted with the extra sauce… but as you may have noticed my day was all over the place so I’m not sure 😂 Cook til tender! (I’ll retest soon and update you!)
