A bit of summery fun… Mango, Lime & Vanilla Bean Ice Cream (with freeze-dried mango crumble)! 😍💛

Our Far North Queensland summer weather has coincided with an influx of visitors, so when a box of mangoes turned up on my doorstep the other day I thought it was time to get the ice cream maker out and make some ice cream for everyone. I’m so glad I did! 🤤

If you’re like me and your ice cream maker has been sitting in the laundry or the back of a cupboard, neglected and lonely, take this as your sign 🛑 to get it out a dust it off... it’s ice cream season! If you don’t have an ice cream maker, don’t worry - there’s a non-ice-cream-maker method for you in the recipe too. 😊

Well it’s been a very delicious and fun few days

Well it’s been a very delicious and fun few days here, with a family Thanksgiving dinner, a Christmas street festival in our little town, a cooking class for our gut health program, a big dinner with family and friends afterwards, our dear friends visiting from the UK so lots of good food and good chats around the table, and the Monday cooking class today! I can’t wait to share some new recipes with you over the next few weeks 🤗

Have you tried 'mushroom pizzas'? So yum!! (If you like mushrooms!) They're really quick to make, just upside down portobello mushrooms for the base, pull out the stalk and add whatever pizza toppings you like (tomato paste, herbs, olives, bacon, cheese, spinach, etc) and bake until browned.

Easy peasy!! 😃

If you can’t have dairy, try grated zucchini on top with whisked egg drizzled over, or a dairy free white/cheese sauce, instead of the cheese.

Some days you’ve just got to “go with the slow

Some days you’ve just got to “go with the slow”. 🌼 I was tired today, so I decided it was not going to be a day where I got up at 5.30am and started work before everyone was up (as I’d planned)… it was going to be a take-it-slow day. I got up at 7, drank my Vit C drink, sat in the sunshine, ate chicken and veggies and butter (dinner leftovers) for breakfast, laid in the hammock in the sunshine with my chai tea, sat in the hot shower for a while, then propped myself up with pillows on my bed and worked from there (in between reading and resting). Chicken stock with a bit of chicken for lunch, more Vit C drink, some more time in the sunshine picking strawberries in my garden and I’m finally feeling more myself! My detoxing (from mercury and two infected root canals which have been removed) is going well, but I’m in the tired stage… so lots of sunshine, saunas, sleeps and nourishing food, and I’ve been told I’ll have heaps more energy in a couple of months!! Looking forward to it 😄 Meanwhile, Cass is cooking dinner tonight, so the slow day can continue. 😊❤️

What a great Quirky Cooking workshop at @putiapurefoodkitchen in Brisbane! 🤩 We made seed crackers topped with macadamia pesto and beetroot labne dip, prawn & mushroom soup, Tex-Mex salad, Moroccan lamb loin chops & pumpkin tray-bakes, Russian custard ice cream, nutty chocolates with freeze-dried berries & flowers, apple cinnamon turnovers with almond meal pastry, and pumpkin-spice crispy nuts. Lots of chatting and cooking and eating and fun!! Looking forward to the Melbourne classes in a couple of weeks time 🎉🎉

Thanks to all who came, it was so nice to meet/catch up with you all and spend an evening together. 🤗

{Recipe} Feeling like you need a Friday night treat? My delicious nut butter fudge is so easy to make you can whip it up in 15 minutes, pop it in the freezer to set, and you'll be enjoying creamy, delicious fudge within the hour! Here's the base recipe with some variations to choose from...

Variations:

Photo 1: Amanda posted this photo in my Quirky Cooking Chat Group and said, "Two variations of Jo’s Peanut Butter Choc Fudge. First one I used cashew butter in place of peanut butter, left out the cacao, reduced the butter to 200g and mixed in chopped macadamia nuts at the end. It taste like a caramel Mac nut fudge! 😍 The second one I used almond butter in place of peanut butter and left out any additional nuts. This one just tastes like a chocolate fudge. Both so good!" YUMMMM!!! I can't wait to try that cashew-macadamia version!

Photo 2: Fruity-Nutty Fudge - mix in a variety of roasted, chopped nuts (macadamias, almonds, cashews, pistachios) + a mixture of chopped glace ginger, dried figs, dried sour cherries or whatever dried fruit you'd like. (This makes a GREAT Christmas gift!)

Photo 3: Peanut butter fudge with crunchy roasted, chopped peanuts added at the end.
