{Anzac Day slice or biscuits} For those of you nee

{Anzac Day slice or biscuits} For those of you needing a gluten / grain free / GAPS variation for Anzac Day bikkies, here’s my fave! It’s quick to make and delicious either baked as a slice or as biscuits. 😊

Ingredients:

180g blanched almond meal
100g macadamias or cashews
70g shredded or dessicated coconut
1/8 tsp fine sea salt
1/2 tsp bicarb soda
140g unsalted butter (melted)
60g honey, or to taste

- Preheat oven to 170C.
- Chop nuts and mix with dry ingredients in a bowl (or in Thermomix 10 sec/speed 4).
- Add butter and honey and mix to combine (15 sec/rev/speed 4 in Thermomix). Mixture should be able to be pressed together into a ball – if needed, add a tiny sprinkle of water or milk.
- For a slice, press into a large rectangular dish (lined with baking paper). For biscuits roll into balls and press gently to flatten.
- Bake slice 15-18 mins; bake biscuits 12-15 mins, or until golden.
- Cool before serving (will crumble if served hot); I find they’re best stored in the fridge or freezer and served cold so they stay firm and chewy.

Variations:
You can use coconut oil instead of butter but use 120g and add 20ml milk of choice. They will be a bit more crumbly so need to be chilled before serving.

So this happened… Our eldest daughter, India, go

So this happened… Our eldest daughter, India, got married yesterday! 💘 It was a small, relaxed, outdoor wedding at the lake with a few close family and friends - beautiful weather, a meaningful ceremony, afternoon tea in the sunshine, kids running around barefoot eating cupcakes, and catching up with loved ones visiting from far away - a very low-stress, happy celebration! 🎉🎉

Our family and community came together to help with everything from growing the flowers for the wedding, arranging the bouquets the night before (G’ma helped Indi make her wedding bouquet 💐), making the food, decorating and setting up, and cleaning up afterwards. It was the most gorgeous, chilled, happy, peaceful, delicious, lovely wedding ever. ❤️🌿

Afternoon tea was almost all gluten free, grain free, home-baked treats (with dairy-free, egg-free and nut-free options for those who needed them, of course 😁) as well as absolutely amazing antipasto and fruit platters from @the_gillies_cafe, a tower of GF tallow-fried cinnamon donuts from Doin Donuts in Atherton, our fave @buchikombuchaustralia water kefirs, and @coffeebyhannie’s pink coffee van serving hot drinks and iced coffees. 🤩☕️🍓🍪🧀🍰 (See details of the food we made in comments!)

We sent leftovers home with guests, dropped some off to neighbours, and I still have a lot of cupcakes, wedding cake, donuts, cheese and crackers left if anyone needs a treat today 😄😄 (I may have over-catered a little LOL!! 😁)

So happy to welcome another son into the family, and excited for India and Sean as they start their journey of life together. 🥰

5 minute meal for one… my quick lunch today! Pou

5 minute meal for one… my quick lunch today! Pour about a cup of stock into a pan on the stove and turn it to high heat (I used chicken stock). Roll some mince into balls and add to the stock (yep, plain mince, any kind you like), sprinkle with salt, pepper and dried mixed herbs (if you like). Add some julienned carrot and zucchini (or just grate some in), add a few slices of button squash (or asparagus or shallots or whatever you want), stir, turn heat down a bit, put the lid on and simmer a few mins… Serve with sauerkraut on top! Easy peasy light meal.

Saturdays are for cooking without hurrying, losing myself in the process, feeling time slow down and letting the world rush by without me…

Sometimes.

Other Saturdays fly by in a flurry of people and noise, but I have to be honest… quiet Saturdays in the kitchen are my favourite. ❤️

(I was craving crunchy red cabbage slaw with vinaigrette dressing for lunch today, so this is what I made. I ate it outside while swinging in the hammock. Then my daughter and her fiancé arrived and we spent the afternoon organising wedding details, seasoning pans, working on program videos, making a roast dinner, and doing washing and cleaning… but having a pockets of quiet in the day made all the difference between a peaceful day and a hectic day. ☺️)

How to make crispy chicken skin (for snacks or gar

How to make crispy chicken skin (for snacks or garnish) + chicken fat (schmaltz) 🐔✨

Don’t toss that chicken skin! Instead, turn it into crispy, golden chicken crackling and render out the rich, nourishing fat—aka schmaltz—a traditional cooking fat full of flavour and goodness. Perfect for nose-to-tail cooking and reducing food waste!

Here’s how:

🔪 Start with semi-frozen chicken skin and chop it into small pieces.

🔥 Place it in a large frying pan, cover with water, and simmer over medium-low heat until the water evaporates and the fat begins to render.

🥄 Stir and scrape the pan occasionally as the fat continues to melt and the skin becomes crisp and golden. It will take about 45-60 mins from start to finish.

🫙 Strain the fat (schmaltz) into a bowl, let it cool, then store in a jar in the fridge.

😋 Pop the crispy chicken skin into another bowl, sprinkle with a little salt, and enjoy as a snack or a savoury garnish for your favourite chicken dishes!

🍗 I love using these crunchy bits to top my Creamy Mustard Chicken with Mushrooms & Asparagus—SO good.

🥦 And schmaltz? It’s perfect for sautéing, roasting veggies, or frying, especially if you’re dairy free. With a smoke point around 190–200°C (375–392°F), it’s a stable, natural, and nourishing alternative to processed oils.
