We had a delicious pot-luck, family lunch at Joye’s house today - roast beef and veggies, chicken satay stir fry, roast chicken, potato salad, corned beef, salad, Joye’s sourdough bread, and homemade ice cream (cherry almond), mini pecan pies, date and cardamom tart and coffee for dessert 😄🤤 (all GF except the sourdough) which was greatly enjoyed by all! Our family lunches are the bomb!! 😁 Oh and my son Simi bought me a new vacuum cleaner (bless him, I needed one!) and the girls have been cleaning the kitchen for me - I do love practical presents, don’t you?!! 😄

14 years ago I developed this dairy-free, avocado chocolate mousse/ice cream/semifreddo recipe completely by accident!! 🤯😍 It’s so good and it’s been waaaayyyy too long since I made it, but since it’s been popping up on people’s stories lately and since I have three ripe avocados that need to be used asap, I think it’s a sign… 😁

Notes:

Use a powerful blender or food processor if you don’t have a Thermomix.

This recipe was developed for the TM31 which has a slightly smaller bowl than new models of the Thermomix, so you may want to double the recipe so that it’s easier to get a smooth texture.

{Recipe} This chocolate mousse will blow your mind

{Recipe} This chocolate mousse will blow your mind!! 🤯 (Well, it blew ours! 😄)

Our French friend, Claire, really dislikes cooking. But there’s one dish she’s well-known for, and that’s her chocolate mousse. Last time she came to visit, Joye watched her make the mousse and she was very confused when Claire threw the chocolate into a pan with some water and began stirring it on the stovetop with a fork… and it didn’t split!! The end result was so delicious, we had to have a go at recreating it, Claire style, on the stovetop with a fork :D (Except we beat the egg whites in the Thermomix* - Claire uses a stick blender.)

Here’s Claire’s recipe 😁: “Perfect Chocolate Mousse ! I never have recipes 🤗 but melt the 70% chocolate with a bit of water. Beat the egg whites. Put egg yolks with chocolate then put beaten egg whites with chocolate 😀So simple!!”

In case you need a few more details…

about 1/4 cup water (ish)
360-400g dark, 70% cocoa chocolate (Use good quality chocolate - it will ‘make or break’ your mousse! I love @huntedandgathered chocolate buttons, made from just organic cacao beans, coconut sugar and cacao butter.)
6 large eggs, separated
sea salt to taste

Place water into a heavy-based saucepan and heat, then add chocolate buttons or roughly chopped chocolate. Stir with a fork or wire whisk until melted and silky smooth then remove from heat.

While chocolate is melting, whisk egg whites with a good pinch of salt until stiff peaks form. (I use a Thermomix & whisk with butterfly 3 mins/speed 4 - or use electric mixer or hand mixer.)

Whisk egg yolks into the warm chocolate mixture then gently fold through the egg whites. Pour into a dish (or individual glasses) and place into the fridge to set for a couple of hours.

That’s it!!

I’ll be forever grateful to Claire for this decadent recipe, but I don’t think I’d better make it again for a while as it’s impossible to walk past the fridge without stopping for a little taste, many times a day 😂! (Thank you, Claire! 🤗❤️)

*Note: Yes you could use the Thermomix for the chocolate part - but it’s easy and quick on the stovetop 😊

{Recipe} The weather is cooling down, so here’s one of my favourite soups from my blog and Life-Changing Food cookbook… Cream of Broccoli Soup! A delicious, gut-healing, nourishing soup that is quick to make and perfect for lunch (or dinner or breakfast 😄) on a cool day. 💚🥦

250g broccoli (approx 1 head), cut into florets
150g cauliflower, cut into florets
150g leek, sliced (you can use the green or white leaves, or both)
60g ghee or duck fat
500g chicken stock
1 tsp fine sea salt
pepper to taste, if tolerated
2 egg yolks (optional but delicious & nutritious)

Method

Place broccoli, cauliflower, leek, ghee or fat, stock, salt and pepper. Simmer for 20 minutes, until vegetables are tender.

Add egg yolks and blend with an immersion blender, or remove to a blender and blend until smooth.

Thermomix Method

Place broccoli, cauliflower, leek, ghee or fat, stock, salt and pepper and cook 20 min/100⁰C/speed 1.

Add egg yolks, and blend soup 30 sec/speed 9.

Storage

Store for up to 2 days in the fridge, or freeze for up to 4 months.

{Coconut Raspberry Jellies} I’ve had a few people ask for this recipe from Simple, Healing Food, so here you go - a gut-healthy weekend treat!

In the jellies in this photo I used homemade coconut cream and it separated a little (which I thought looked kind of cool 😄). And by the way, that’s vanilla powder not pepper in the jelly in case you were worried that my pepper addiction had gone too far... 😁😁 Sweeten them to taste and you can use maple syrup rather than honey if you prefer.

❤️ Coconut Raspberry Jellies ❤️

Coconut jelly:
250ml coconut cream
1 ½ Tbsp gelatine
50g honey
⅛ tsp vanilla powder or ¼ tsp vanilla extract

Raspberry jelly:
250g frozen raspberries
40g honey
1 ½ Tbsp gelatine

Method

1. Prepare moulds for jellies by placing them on a baking tray. Or line a small (26x19cm) rectangular dish with baking paper and set aside.

2. Coconut jelly: Place the coconut cream, gelatine, honey and vanilla in a heavy-based saucepan and warm, stirring, over medium heat until bubbles form on the edges. Remove from heat and pour into moulds or dish, filling half full. Place the tray or dish carefully into the freezer (making sure to keep level). Chill for at least 30 minutes or until firm before adding the next layer.

3. Raspberry jelly: Place raspberries, honey and gelatine into a heavy-based saucepan and heat over medium heat, stirring, until it begins to simmer. Reduce heat to low and keep stirring until raspberries have broken up, about 10 minutes. Strain jelly through a fine metal sieve into a bowl and allow to cool until room temp but not cool enough to set.

4. Pour raspberry jelly carefully over the coconut jelly to the top of the moulds or dish. Place back into the freezer to set for at least 30 minutes or until firm.

5. Pop jellies out of moulds into containers. Or if jelly is in a dish, slice into 2cm cubes and place into containers.

✨ Beef & cabbage soup with pumpkin & cauliflower mash (SHF) There’s a similar recipe for the Thermomix in my first cookbook, Quirky Cooking) 😍

✨ Gypsy stew (LCF) Use rainbow chard in this one for a beautifully colourful result!

✨ Beef & vegetable stir fry (SHF) The recipe in SHF is a GAPS version - the beef is simmered in stock first until tender - or you can do a traditional version with the beef seared in a very hot wok. (The reason for simmering in stock on GAPS is to make it easy to digest for a sensitive gut.)

✨ Roast chicken with herbs (Best ever roast chicken from SHF) This is chicken that has been used to make a short-cooked stock, then roasted in the oven on high heat to crisp the skin - deliciously tender!

✨ Joye’s potato bake (blog - link in bio for blog or search ‘quirky cooking potato bake’) Comfort food!! Layers of sweet potato & English potato baked in a creamy, lemony sauce.

✨ Roast beef & veg - I don’t have a recipe written down for this, I just cook the roast in a covered roaster with a little water, carrots, pumpkin, herbs, salt & pepper on 160C for about 3-4 hours depending on size of roast. Serve hot or cold, sliced thinly.

✨ Lamb Massaman curry (SHF) Use the Beef Massaman curry in SHF but swap beef for lamb. Yum!!

✨ Meatloaf & roast veg (SHF) We had visitors for dinner the other night and served this meatloaf with roast pumpkin and carrots, roast potatoes (topped with butter, sour cream and grated cheese) and broccoli, then roasted plums & berries with lemon yoghurt cupcakes for dessert. 😍 (Also added pate to the meatloaf for extra goodness.) An easy and yummy meal to pop in the oven when you have a few mouths to feed and don’t want to spend all day in the kitchen!! 🤗
