Raw Creamy Strawberry Pudding - Quirky Cooking

This is the most DELICIOUS pudding ever – and it’s so healthy!  Ruth over at the Thermomix Forum converted it from a recipe in the book Baby Greens: A Live-Food Approach for Children of All Ages.  Thanks Ruth!!  It’s kind of like a mixture between a pudding, and strawberry yoghurt.  You can freeze the strawberries to make it thicker and colder if you like, or just use them fresh.  If your kids don’t like avocado, just don’t tell them it’s in there, and they’ll never notice – mine didn’t

Ingredients
  1. 1/2 cup pitted dates
  2. 1/2 cup water
  3. soaked dates with soaking water
  4. 1 cup of avocado (about 2 avocados)
  5. 1 1/2 cups of strawberries (I just used 1 punnet) - either frozen or fresh
Instructions
  1. Soak dates overnight in water, or at least for a few hours until soft.
  2. Place soaked dates, avocado, strawberries in Thermomix.
  3. If using fresh strawberries, blend on speed 5 for 30 - 50 seconds. If using frozen strawberries, blend on speed 9 for 30 - 50 seconds.

    Just make sure you have nice, mild tasting avocados and you should be right! (Not old ones that have that sharp taste.) My kids didn’t notice, and when I told them my youngest said, “Oh, I don’t like avocados, but I liked that!” At least if they don’t like it, you could eat it all yourself!! 😀 I even froze some for my dh, and it was nice frozen too.

    I can’t believe it Joanna, but my husband ate some of this pudding and liked it. Avocado is top of his “I refuse to eat this food list”. (Ever since I made avocado burgers about 20 years back and I had a full scale revolt on my hands.) So well done. Miracles do happen!

    Made this today for breakfast and for once I was guiltless when my kids wanted seconds! So yummy and filling and nourishing! Hubby who isn’t a huge fan of avocados loved it too. Thanks for sharing!

    Yummy! But it turned green after a short time? So the avocado was no longer hidden… My lovely teenagers like the taste of the cream, but as they don’t like avocado nor dates, they won’t eat when they know it’s in there. Teen’s logic, I guess.
