{Recipe} Pork Meatball Soup with Dill, Sour Cream & Lemon … now on the blog!

As with many of my favourite recipes, this one began as an impromptu, last-minute meal made with whatever I had on hand… some mince and silverbeet that needed using up, some leftover grain-free muffins blended to make crumbs, some herbs from my garden, a bit of milk kefir and sour cream, and a lonely tomato from the veggie drawer… 😄 We all LOVED it!! I think the fresh dill, sour cream and lemon made all the difference. 🤤

Since posting a video a few months ago showing this recipe, I’ve made it lots more times for the family, had many messages from people who made it and loved it, served it at both my gut health retreats in Italy and Far North Queensland last year, and I even took a big jarful to my hairdresser (with the recipe) and she says she makes it often now! I’m often asked where to find the recipe, so I thought I’d better hurry up and share it on the blog. 😁

Hi, I’m Jo! If you’re new here (or it’s been a while), welcome to Quirky Cooking! I’m a cookbook author and passionate foodie who believes in the healing power of real food. I live in the Atherton Tablelands, Far North Queensland, where I run my business while enjoying the country life. I also love to travel (running cooking retreats and classes in Australia and overseas) and enjoy spending time in nature… so you’ll see a mix of food, recipes and cooking videos, plus some travel, health and nature-therapy posts on my page and stories! 🌿 (And a bit of quirky humour 😁)

My journey into “food as medicine” began with helping my family through some tough health challenges—including my son’s severe OCD and anxiety and my food intolerances. I learned that healing starts in the gut and that traditional, nutrient-dense foods can transform both physical and mental health.

I’ve shared our family’s food and health journey for over 16 years, hoping to help others with what we’ve learned. What started as a little recipe blog in 2008 (written amidst raising and homeschooling four kids!) has grown into a supportive community that I’m so grateful for. And I’m also grateful to my now-grown-up kids who’ve always been the “why” behind what I do, and have taught me so much. ❤️

These days, I teach how to make healthy eating simple and delicious—through my cookbooks (Quirky Cooking, Life-Changing Food, and Simple, Healing Food), workshops, videos, retreats, podcasts, and online classes. I’m always cooking up something new to share with you! 😄

Chicken strips fried in tallow are the BOMB 💥 (just sayin) 😁 These are thigh fillets sliced into 2cm strips, coated in whisked egg and seasoned tapioca starch, and fried in homemade beef tallow. You can’t taste the tallow and the result is so crunchy! 😍 Best “fakeaway” ever!! 😁

We made grain-free pastry & cheat’s sausage rolls, cheese puffs and tortillas (wraps), also grain free: raspberry and orange jellies (gummies); coconut macaroons (plain and chocolate); and lemon and macadamia bars. Yum!! All the recipes are either nut free or have nut free variarions.

My mum and dad arrived home from an overseas trip

My mum and dad arrived home from an overseas trip today, exhausted from all the flight cancellations, delays and airport waits, and tired of eating out… so I met them with a care package of healing, nourishing food. This is what I crave every time I come home from a big trip - short-cooked chicken stock, roast chicken (roasted after making the stock), and homemade sauerkraut. ❤️ #foodislove

Here’s a great holiday treat to make with the kids - my honey-sweetened marshmallows recipe - this photo is from @monitapardo 😃 Jenny added blue spirulina powder to half the batch and Quirky Cooking antioxidant powder to the other half! How cool do they look?? Plus delicious and no nasties 🎉🎉

The Antioxidant powder is in my online store - it’s made from raspberries and Davidson plums (pesticide free) and blueberries and strawberries (all Australian grown, and freeze-dried and packaged locally for my shop). ❤️ Jenny used about 1 tsp for half a batch of marshmallows.

The kids came over for dinner last night and I needed something quick to prep that makes plenty (with leftovers for lunches), so it was an old fave I hadn’t made for a while - roast lemon chicken and veggies! (Served with mash and green veggies or fermented veggies / sauerkraut) Original recipe is in my Life-Changing Food cookbook, I butterflied the chicken instead of cutting in pieces. Yum, leftovers sent home with the kids! ❤️

{Recipe} Spicy Beef, Egg & Avo Bowls 🥣🥚🥑🥗 This is a yummy, family-friendly lunch or dinner that doesn’t take long to prepare! Recipe is from my Simple, Healing Food cookbook.

Serves 8 (or cook and freeze the mince in small servings and prep the eggs and salad as needed)

8 eggs
1–2 Tbsp freshly squeezed lemon juice
2–4 avocados, diced
2 Tbsp ghee or extra virgin olive oil
3–4 onions, sliced
800g grass-fed beef mince, or 700g mince + 100g beef liver, finely chopped
1½ Tbsp smoked paprika
1 tsp dried oregano
¼ tsp cayenne pepper
fine sea salt and coarsely ground black pepper, to taste
600g finely sliced lettuce or baby spinach leaves
Sour cream or mayonnaise
Sauerkraut or fermented veggies
250g pitted preservative-free kalamata or black olives, sliced

Method

Boil eggs to your liking (hard- or soft-boiled). Drain and rinse under cold running water.

Drizzle lemon juice over avocado.

Heat ghee or olive oil in a heavy-based frying pan over medium–high heat. Add onion and cook, stirring, for 5 minutes, or until softened.

Add mince (and liver if using), smoked paprika, oregano and cayenne pepper and cook for 5 minutes, or until meat is browned.

Season with salt and pepper to taste, then remove from heat and loosely cover.

Peel boiled eggs and cut into quarters.

To serve, divide lettuce or spinach among eight bowls, add a few tablespoons of mince mixture, then top with the avo and egg quarters to one side. Add a tablespoon each of sour cream or mayo and sauerkraut or fermented veg and sprinkle with black olives.

Simple and delish!
