Dairy Free French Onion Dip - Quirky Cooking

Today I was making my dairy free cream cheese recipe, and since it makes so much I decided to turn half of it into a French onion dip. This is what I came up with. I’m not sure if it tastes as much like French onion dip as French onion dip does, but I thought it was pretty awesome! Ha ha! My only taste testers were my kids, and they kept coming back for more, and my daughter said, ‘Everyone’s going to go crazy for this!!’ – so it must be okay… Try it and let me know what you think.

If you’ve never tried caramelizing onions in your Thermomix, you really should – they turn out amazing, and you don’t have to stand there stirring them. I think I’ve got it nailed now. Woo hoo! Here’s a pic of the Thermomix caramelized onions… yummo!

Ingredients
  1. 2 large brown onions, halved
  2. 1 tspn Rapadura
  3. 50g olive oil or ghee
  4. 1/2 tspn baking soda
  5. 1 tspn sea salt
  6. pepper
  7. caramelized onions
  8. 250g dairy free cream cheese
  9. 100g homemade mayonnaise
  10. 1 tspn fresh lemon juice
  11. 3 Tbspns savoury yeast flakes
  12. 1 tspn onion powder (if you like a stonger onion flavour)
  13. 1 tspn vegetable stock paste (or half a tspn if you like less salt)1/2 tspn tamari or soy sauce (optional)
  14. some finely chopped fresh chives
Instructions
  1. Chop onions for 2 seconds on speed 5. Don't be tempted to chop for longer, you want them a bit chunky!
  2. Add Rapadura, oil/ghee, baking soda, salt & pepper, and cook at Varoma temperature for 15 minutes, reverse, speed soft, with the MC off to let the steam out.
  3. Add 2 Tbspns water to Thermomix bowl and cook for another 5 minutes, Varoma temp, reverse, speed soft, with MC off. The water helps to deglaze the base of the bowl. Remove onions to a bowl to cool down.
  4. Make a batch of homemade mayonnaise, and a batch of dairy free cream cheese.
  5. Return onions to Thermomix bowl, along with remaining ingredients, and mix gently on reverse speed 3 until well combined, using spatula as needed.
  6. Garnish with some more finely chopped chives.
  7. Serve with crackers, plain chips, or raw vege sticks.

    Just curious as to why do we add baking soda to the onions when caramelizing, I have never done this when caramelizing onions.

      By adding baking soda (bicarb soda) to the onions, you increase the pH level and this speeds up the caramelisation process! You can leave it out, just cook a bit longer.
