If you want to improve your breakfast habits, begin thinking of breakfast as a meal no different from the other meals of the day. Don't worry, there are plenty of ways to prepare ahead so that your morning meal is quick and easy to prepare without resorting to empty carbs!

Eggs for breakfast!

Bacon and eggs still my favourite go-to for breakfast! If you can’t have eggs scroll down for plenty of egg-free breakfast ideas.

  • Scrambled in ghee, served with sauerkraut; add some cooked mince or sliced sausages (leftovers fine); maybe some crispy bacon, tomatoes, onion, chives, spring onion or sour cream (or a combo).
  • Breakfast Scramble: (recipe in LCF) eggs scrambled with cooked mince, chopped tomato, grated zucchini and herbs and spices.
  • Soft boiled: Serve with butter or a slice of cheese and salt and pepper, or with grain-free toast, crackers, asparagus dippers. In a hurry? Boil eggs the day before and remove shells, halve, sprinkle with salt and pepper and store in small container to take with you. Or make Devilled Eggs (recipe in SHF) if you want to step it up a notch!
  • Boiled egg breakfast bowls: Boil eggs day before, peel; prep container of things to add to bowl like baby spinach, cherry tomatoes, fermented/pickled beetroot slices/sticks, carrot sticks, cheese cubes, ham slices, savoury spiced nuts; grab n go!
  • Eggs poached in stock: (recipe in SHF & LCF) poach eggs in meat stock (with or without grated veg) or leftover soups or sauces (eg. huevos rancheros).
  • Eggs fried in ghee/olive oil: serve with kraut, bacon, salad, steak; a little bit of leftovers bulked out with a fried egg.
  • Frittata or Spanish tortilla: (recipes in SHF and LCF) use leftover roast veggies, add in some baby spinach, cherry tomatoes – bake ahead & serve hot or cold. 
  • Bacon, egg & spinach pies (recipe in LCF): prep ahead, serve hot or cold.
  • Mini quiches, with or without pastry (recipe in SHF), or mini egg/feta/herb pastries: (use Almond Meal Pastry recipe in SHF) prepare ahead and freeze, serve hot or cold.
  • Spicy pumpkin mash with baked eggs (and in SHF): prep mash day before, lasts 3 days in fridge; warm in pan, nestle in eggs, bake. Or if in a hurry, warm in pan, fry eggs to have alongside with some kraut.
  • Breakfast casserole (and GAPS version in SHF): prep ahead, warm slices in pan with a little ghee or olive oil. Salad leaves or kraut to serve. Can slice in smaller squares and eat cold.
  • Toad in the hole: (recipe in SHF) prep ahead, slice in squares, serve cold or heat slices in ghee/olive oil in a pan.
  • Spicy beef, egg and avo bowls: (recipe in SHF) prep beef mixture, cook and peel eggs, prep additions, store in fridge; warm beef in pan before breakfast and put out dish with other additions for them to make own bowls. (Make this one without the boiled eggs for egg-free.)

Egg-Free Breakfast Ideas

Note: There are 109 recipes in Simple, Healing Food that are either egg free or have an egg free variation, out of 140 recipes.

  • Baked beans: prepare ahead, warm, serve on gf toast or with poached/fried/scrambled eggs, add bacon and sauerkraut if desired.
  • Baked whole sweet potatoes: store in fridge for up to 5 days, slice and heat in ghee in pan, serve with butter and salad or kraut; or with eggs or slice of ham/bacon or other options below).
  • Cabbage, bacon & onion stir fry: (recipe in LCF) prep ahead, warm in pan & serve with sweet potato, kraut, etc.
  • Savoury mince on toast: (recipe in SHF) prep ahead, warm in pan & serve on gf toast.
  • Picky plate: prep ahead with bits and pieces like cheese, fruit, cold meat (leftover roast sliced thinly/ham/cold chicken wings/legs, herbed meatballs (SHF), nuts/seeds, dips/pate (SHF), seed crackers (SHF).
  • Baked mini meatballs/herbed meatballs: (recipe in SHF) prep ahead, warm in pan with roast veg, or eat cold in a cos lettuce leaf wrap with sauce, cheese, pickles. (Also great with scrambled eggs if tolerated.)
  • Sausages: bake a tray of gf (preservative-free) sausages 20 mins at 180C; store in fridge for 3-4 days; serve warm or cold, or chop in small pieces and scramble with mushrooms & roasted veg (or eggs if tolerated).
  • Mushrooms – crispy or sauteed: (SHF) cook ahead, warm in pan & serve with roast veg (or eggs if tolerated).
  • Thinly sliced roast beef/lamb/ham cold with slice of cheese, lettuce, chutney. Eat cold, or warm meat in pan and serve with GF toast (or fried egg if tolerated).
  • Homemade meatza/pizza: (recipes in LCF & SHF) Make extra for dinner so leftovers for breakfast/lunches! Serve hot or cold.
  • Baked fish fingers or grilled fish: (SHF) cold with egg-free aioli, or warm in pan and serve with veg and/or kraut.
  • Chicken wings/drumsticks: roast after making stock (recipe in SHF) – serve cold or warm with roasted veg/salad/kraut.
  • Rosti/hashbrowns: (recipe in LCF) Use leftover roast potatoes or mashed potato; or raw sweet potato as per LCF. Serve cold or hot with tuna or mackerel and a spoonful of sour cream!
  • Leftovers from dinner. Always a great option for a nutrient-dense, egg-free breakfast option!

Soups, Stews, Hotpots

Having soups prepped ahead and frozen in small batches is a great time-saver for both breakfasts and lunches. Heat pureed soups and take in a travel cup for meal on the go, or take chunky soups, stew and hotpots in a thermos. Can also get stews/hotpots cooking the night before in a slow cooker so they’re ready to go in the morning.

Smoothies for a Meal-On-the-Run

Pour a smoothie into a large travel cup and you’re good to go for breakfast on-the-run! Smoothies can be prepped ahead by freezing pre-measured ingredients in bags – add to blender or Thermomix with liquids and blitz for 2 mins before you dash out the door.

Nourishing Hot Drinks

If all you have time for in the morning is a hot drink in a travel cup, make it a good one! (And maybe grab a handful of nuts and a banana to take with you, too.) 🙂

  • Butter Coffee or Golden Butter Coffee (LCF
  • Creamy Hot Chocolate (make nut milk the night before) or Mexican Hot Chocolate (LCF) – can add a spoonful of collagen, mushroom powder, and/or a couple of egg yolks for extra goodness.
  • Meat Stock (SHF) is always a good option! Whisk in a couple of egg yolks, or a spoonful of sour cream.
